This chart is meant to help you conquer the challenge of choosing the right yeast for every fermentation. The data in the chart is only intended as a guide. Please refer to the Naturally Selected Yeast and Cellar Sections for additional guides. For specific questions please email or call your local Lallemand representative or distributor.

Some notes:

  • Highest rating = 4
    Lowest rating = 1
  • Please note that the 'temperature range' column does not indicate the 'optimum temperature range'. Keep in mind that a yeast's ability to ferment within the given range will depend on the alcohol potential and other antagonistic conditions.
  • The 'relative nitrogen requirement' refers to how much nitrogen one yeast requires relative to the other yeasts on the chart.
  • The 'H2S production' columns refer to the yeast's relative H2S production in a chardonnay juice under limiting (60ppm) and at 170ppm assimilable nitrogen
  • EVC = Enhances Varietal Character
